Why Teff Grains …

This new grain that’s not really a grain but a seed, is making a grand entrance into the North American food scene.  To those who are suffering from celiac disease, teff is a phenomenal substitute for wheat and other foods containing gluten.  

This versatile seed is meeting today’s consumer demand for clean ingredients that are nutritious and wholesome.  Teff grains – naturally gluten free, is high in calcium, fibre, magnesium, zinc, vitamin B6 and is easy to digest.  

It’s zero gluten content is ideal for those suffering from IBS, Celiac disease and other stomach related issues.  Teff flour is not considered a “sweet” flour, like coconut or almond.  It has a neutral taste and as such blends well with other gluten free flours. 

Ways to use teff grains

The granules can be simmers to create a breakfast porridge, much in the way of how you might make oatmeal.  You may even add it together with your oatmeal.  In three to five minutes it simmers and completely blends in with the oatmeal, garnish with your favourite topping and enjoy.

Other ways to incorporate teff in your breakfast

You can simply add it to scrambled eggs, or pancake batter.  It does not change the texture of the batter.  If you add it to pancakes, let the batter sit for a few minutes just to soften the granules.  You may find it a bit gritty, however if you’re into crunch you will not mind knowing that it is infusing your pancakes with wholesome nutrients.

Baking with Teff

The granules will need to be used with a binder flour (like arrowroot, tapioca, etc  list below) it does not have the consistency by itself.  Gluten free flours which works well with teff flour and teff grains are oat, cassava, white bean and quinoa.  There may be more options, however these are the ones I’ve used to date.

Baking with teff flour instead of the granules, is completely different.  For starters, the crunch or grit is not there, using dark teff will turn your goodies into a brown colour.  You may not like the colour but remember food is fuel, and from that perspective reach for the nutrients over the colour.  Teff is a good source to make bread and pita too.  Teff flour performs nicely when added to a combined baking mix.  Teff flour on its own is “loose” because it has no gluten and requires a binder to hold it together for baking.  Binders are things like arrowroot flour, tapioca corn starch, xanthan gum, guar gum, etc. 

Teff grains as a topping

On salads of any kind (potato, garden, quinoa, crunchy or roasted vegetables, etc.) teff grain is a good topping, similarly to how you would use chia seeds, nuts or any other super foods you like to add to your salads.

Used to make pudding

Are you a lover of chia pudding?  If yes, fantastic!  Teff grains added to your chia pudding, completely dissolves in the pudding.  Teff has no distinct taste therefore it will not alter the intended flavour of the pudding.

Coating for chicken

Adding some granules to the breaded coating when you’re baking chicken, fish, or any other meat adds a nice crunchy finish to the baked food.

 Soups and Stews

Again, a great addition to turn an already hearty meal into a highly nutritious meal by added teff grains.  Add granules during the last 10 mins of cook time.

Where to buy Teff?

Teff grains (seed) format can be easily sourced from a wide variety of grocery outlets.  The most popular brand here in Toronto is Bob’s Red Mill.

If you’re buying teff flour, be sure to source it from a reputable outlet.  Sometimes the flour is old and has a somewhat unpleasant smell and taste.
