This chickpeas millet loaf makes for a great snack any time of day. Chickpeas naturally has a very robust taste and combined with millet is the perfect baking mix. Light yet filling.
A combination of gluten free flours is always recommended. Gluten free baking can sometimes be tricky, in the sense that the treats are dry and difficult to eat unless you add a lot of simple starch, which often spikes blood sugar levels. This is NOT the case with the recipes on this site. Xanthan gum is never used in any of our recipes.
