This healthy cake recipe is made up of the goodness of gluten free oat flour, buckwheat, chickpeas, arrowroot and brown rice. A combination that results in a very neutral taste flavoured by glazed citrus and lemon extract.
A combination of gluten free flours is always recommended. Gluten free baking can sometimes be tricky, in the sense that the treats are dry and difficult to eat unless you add a lot of simple starch, which often spikes blood sugar levels. This is NOT the case with the recipes on this site. Xanthan gum is never used in any of our recipes.
