Quinoa flakes adds a nice crunch mimicking coconut flakes.
These granola cookie ball makes for a great “on the go” snack.
I absolutely love clean ingredient foods, never feeling guilty to have a second one and that’s exactly what happened with these Granola Cookie balls. You will be especially happy if you’re tired with oat flakes -there is none!
Ingredients you will need for granola cookie ball:
INGREDIENTS:
2 tablespoons chia seeds
2 tablespoons water
1 cup quinoa flakes
3/4 cup shredded coconut
1/2 cup walnuts – chopped
1/4 cup almond flour
1/4 cup pumpkin seeds
2 tablespoons sunflower seeds
4 dried figs-chopped
1/4 cup MCT coconut oil
1/4 cup maple syrup (or honey)
Step 1
Prepare Chia Egg
Combine chia seeds with 2 tablespoons of water in a bowl, set aside for 5 mins.



Step 2
Prepare DRY ingredients for granola cookie ball
Combine all remaining dry ingredients together:
1 cup quinoa flakes
3/4 cup shredded coconut
1/2 cup walnuts – chopped
1/4 cup almond flour
1/4 cup pumpkin seeds
2 tbsp sunflower seeds
4 dried figs-chopped
Step 3
Prepare WET ingredients for granola cookie ball
1/4 cup MCT coconut oil
1/4 cup maple syrup
Step 4
Combine WET and DRY ingredients for granola cookie ball
Pour wet mixture over dry and mix thoroughly
Stir in Chia Egg
Form mixture into one big ball and refrigerate for 15 minutes. This helps to keep the granola bits together.
Step 5
Remove from refrigerator and take heaping tablespoonsful and form into a ball.
Place on baking sheet lined with parchment paper.
Bake for 12-15 mins at 350 degrees Fareinheit
Allow these granola cookie balls to cool completely before handling (or they may fall apart).
