Perfect people pleaser dessert, even for those gluten and dairy free.

 

 

There’s no convincing required for this amazing mulberry banana cake.

Everyone will be happy with dessert!   It’ so easy, packed with tara seed powder which contributes a significant amount of protein – it will surely satisfy the after dinner crave.  This mulberry banan cake can easily be made ahead, and freezes well for several weeks.

Mulberry has a naturally sweet finish and mimics raisins when it’s used in baked treats.

Mulberry and banana together, plus chickpea flour creates a super tasty, “leaves you wanting more” feeling after the first slice.

Serves 20 satisfying healthy slices.

Ingredients for mulberry banana cake:

==> 3 ripe bananas

==> 1 cup mulberries

==> 1/4 tsp cinnamon

==> 1/4 tsp allspice

==> 1 tsp vanilla

==> 1 tsp baking powder

==> 1 tsp baking soda

==> 1/2 tsp salt

==> 1/2 cup tara seed powder

==> 1/4 cup ground flax

==> 1/4 cup avocado oil

==> 2 whole eggs

==> 1 cup sorghum flour

==> 1 cup chickpea flour

==> 1 cup oat milk

==> 1/2 cup walnut

** 1/2 banana plus extra  mulberry for topping

Steps to making mulberry banana cake:

STEP 1

Combine all dry ingredients (mulberries, cinnamon, all spiece, baking powder, baking soda, salt, tara seed powder, ground flax, sorghum flour, chickpea flour).

STEP 2

Mash ripe bananas in a separate bowl.

Step 3

In another bowl, beat eggs.

Step 4

Add other wet ingredients to eggs (oil, vanilla if using liquid, milk).

Step 5

Add dry ingredients to wet, add mashed bananas and mix thoroughly.

Step 6

Pour in baking pan lined with parchment paper.

Step 7

Bake for 50 mins at 350 degrees Fahrenheit; then for another 40 mins at 300 degrees.

NOTE:  8inch x 8 inch square pan
