Pumpkin Bacon and Mushroom Soup

Oh Welcome to Autumn!  So creamy, but no cream.  So tasty yet only clean, simple ingredients.

 

 

The easiest, most tasty soup to welcoming those cooler days.

Pumpkin is so fresh in the fall season, but it’s not just for decorations and halloween.  Albeit it’s a different type of pumpkin, nevertheless it makes for amazing soups.

Truly a match made in “Dee’s kitchen” where the South American roots teams up with North American favourites to create a truly magical combination that tantalizes your taste buds.

A perfect creamy base with some texture, yet without any cream or milk.

Simply fresh, clean ingredients cooked to perfection and served with a homemade loaf of bread.

Ingredients for zucchini raspberry almond loaf:

==> 3 cups of chopped pumpkin
==> 1 small to medium size sweet potato (yellow flesh)
==> 1/4 cup bacon bits
==> 1 cup sliced mushrooms
==> Salt and pepper to taste

==> 1 cup chicken stock
==> 3 cups water

Steps to making zucchini raspberry almond loaf

STEP 1

In a large saucepan, bring water to boil.

STEP 2

Peel, and chop pumpkin and sweet potato.

Step 3

Slice mushrooms.

Step 4

Add pumpkin and sweet potato to boiling water and cook on medium heat for approx 40 mins.

Step 5

In a skillet, add 1 tablespoon olive oil and sliced mushrooms.  Cook until mushroom is tender.

Step 6

When you see the pumpkin and sweet potato starting to fall apart, use a hand blender and blend into a creamy base.

Step 7

Add bacon bits, mushrooms, salt and pepper and chicken stock.  Cook for an additional 20 mins or until it’s at a desired thickness.

NOTE:  You may want to taste it after adding the bacon bits if you prefer low salt.  You may not need to add any extra.

Ingredient list: Flour Blend (Teff flour, Gluten Free Oat flour, Arrowroot flour, Brown Rice flour, Buckwheat flour, Coconut flour), Gluten Free Oat Flakes, Glazed Citrus, Tigernut Slices, Raisins, Chia Seeds, Teff Whole Grain, Ground Flax Seeds, Vanilla, Baking Powder, Baking Soda, Salt, Citric Acid.
