Stewed fish is a staple South American dish. From the ocean to the plate, no lemon required. Always gluten and dairy free.

Stewed Fish

A South American Favourite!  

 

Living five minutes to the ocean is a real privilege.  The freshness of that kind of sea food is unbelievable.

Today, I’m miles away from the ocean but I can still enjoy the local cuisine I grew up with, which includes a great tomato stew fish.

But…I didn’t because of the tomatoes which will just aggravate my inflammation … BUT that doesn’t mean the reat of my family couldn’t enjoy a great home cooked stew fish.

I love to share all my favourites with my kids and they love the variety they get to experience.

If you’re not following a nightshade food plan, then I invite you to try this, it will most likely leave you craving more.

Ingredients for Stewed Fish:

==> 8 sole fillets 

==> 2 stalks green onions

==> 1/2 red onion chopped

==> 1 small zucchini chopped

==> 1-2 very ripe tomatoes

==> 1/2 cup chicken broth

==> 2 cloves garlic

==> salt & pepper to taste

==> 1 tbsp olive oil

 or just on Steps to making stewed fish:

Step 1 ==>  Heat one tablespoon of olive oil in cast iron pan.  Add chopped onions and zucchini, simmer for two to three minutes.  (I am using frozen cubed zucchini which is from the last garden harvest).  

Step 2==> ADD: one to two chopped tomatoes, two stalks chopped green onions, and two cloves crushed garlic

Step 3==> Simmer until tomato softens and starts to form a gravy, add half cup chicken broth

 Step 5==>  Carefully dip sauce from the corners and spread over the stop of the fish.  DO NOT stir the or flip the fish – it is very tender and will likely fall to pieces.

Step 6==> Serve stewed fish with Green Banana, Turnip Fries, Sweet Potatoes or simply on top of cooked rice or on top of a green salad.
