Combine zucchini, raspberries and almond and you have an incredible loaf! Totally suitable for those who are vegans or follow of vegetarian (plant based) diet.

Zucchini Raspberry Almond Loaf

Oh What an Addiction – this zucchini raspberry almond loaf will leave you wanting more!

 

 

Moist and decadent!

A superb combination zucchini, raspberry and almond.  This loaf is tasty, and yet wholesome.  It’s chocolatey flavour comes from the carob.

A great source of protein with 45g of protein per 100g of tara seed powder.

Made without refined sugar.  In fact Monk Fruit Sugar does not spike your blood sugar.

Additionally, cacao nibs added that little crunch to the finish.

A perfect way to use up the extra zucchini from the last harvest in this zucchini raspberry almond loaf.

Ingredients for zucchini raspberry almond loaf:

1 almond flour

1/2 cup almond butter

1/2 cup almond milk

2 flax egg

1/4 tsp salt

1/2 cup carob powder

1 tsp baking soda

3 tbsp tara seed powder

2 tbsp cacao nibs

3 tbdp monk fruit sugar

1 cup packed shredded zucchini

Optional:  1/3 cup dairy free chocolate chips

Topping:  Raspberries & chopped almonds

Steps to making zucchini raspberry almond loaf

STEP 1

Preheat oven to 375 degrees fareinheit and line a loaf pan with parchment paper or non stick spray.  I used a ceramic loaf pan. 

STEP 2

In a large  bowl, combine the dry ingredients (almond flour, carob powder, salt, ,baking soda, cacao nibs, tara seed powder, monk fruit sugar). 

Step 3

In a separate bowl, mix until smooth, all the wet ingredients (almond butter, almond milk, flax egg)

Step 4

Add shredded zuccchini and mix well.  If you are adding chocolate chips add it now.

Step 5

Pour batter into prepared loaf pan and bake for 55-60 mins or until a toothpick inserted in the middle comes out dry and clean.

Step 6

Allow this loaf to cool completely before removing from pan otherwise it will fall apart.

Enjoy!

Extras may be stored in the fridge for up to 5-7 days.

*Making flax egg:  add 2 tablespoons of ground flax seed into a bowl and add 6 tablespoons of water.  Stir and let sit for 5-8 mins.
